Our Cellars
As we know our vineyard and we control the maturity into each small plots, we harvest our vineyard in perfect conditions. All our grapes are hand pruned in order to improve the first selection, then the grapes are sorted and goes to the sorting table where anything less than perfect is rejected.


Then we use the same method than our predecessors a long maceration, a gentle extraction with remontage and pigeage. Even if we control our winemaking we need to be very precise because every vintage is different.
The press is also controlled in order to extract different aromas from different press weight.
The wines are then aged in french oak barrels during 12 to 24 months according to the vintage.


All the bottling is handled by us in order to control the process.
Then the wine are stored inside our underground cellar, a 30 meters deep cellar offering the best quality for aging, low and stable temperature with humidity.
